Deceptively Delicious Banana Bread

These little cuties came over today to play and we all had so much fun.

I made banana bread and it was really good. The recipe is from the cookbook by Jessica Seinfeld "Deceptively Delicious." It is the first thing I have made out of here but am excited to try more. I promise you can't even taste the cauliflower and all the kids loved it and so did the mamas : ) Also, I'm doing Weight Watchers and I figured out that if you cut 8 slices it is 5 points per slice -- kind of high but a great treat and healthy too!

Deceptively Delicious Banana Bread
Ingredients:
Nonstick Cooking Spray
3/4 cup whole-wheat flour
1/2 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup firmly packed brown sugar
1/4 cup canola oil
2 large egg whites
1 & 1/2 cups banana puree (3 bananas)
1/2 cup cauliflower puree
1 teaspoon pure vanilla extract

Directions:
Preheat oven to 350 degrees.
In a bowl mix the flours with the baking soda, baking powder, salt & cinnamon. Set aside.
In a large mixing bowl mix the sugar & oil with a wooden spoon until well combined. Mix in the egg whites, banana & cauliflower purees, and vanilla. Add the flour mixture & mix just until combined.
Spray loaf pan with cooking spray (either one large loaf pan or two mini loaf pans). Bake until a toothpick inserted into center comes out clean, 50-55 minutes for the large loaf, 20-25 for the mini loaves.
Let cool, serve and enjoy!
